Quick & Easy Bygan Choka

Description

This is a great quick vegetarian meal that is eaten with roti.

Ingredients

  • 1 large Eggplant
  • 1 small Onion -finely chopped
  • 2- 3 cloves of garlic
  • 1 tablespoon margarine
  • 1 small chili pepper,chipped or 1-2 wri wri peppers finely chopped
  • 1 stem of green onion (chopped finely)
  • 1 small tomato, diced
  • salt to taste

Methods/steps

  1. Cut small slits in the side of the eggplant and push in garlic cloves.
  2. Roast Eggplant in microwave on high for 20 minutes.
  3. Remove roasted eggplant and slice it down the middle while it is hot.
  4. Scoop out cooked inside with spoon (along with garlic)and place in a small bowl.
  5. Add margarine, salt, onion, tomato, green onion and pepper.
  6. Mix well with a fork. Serve with roti.
