Quick & Easy Bygan Choka

Description
This is a great quick vegetarian meal that is eaten with roti.Ingredients

2-3
- 1 large Eggplant
- 1 small Onion -finely chopped
- 2- 3 cloves of garlic
- 1 tablespoon margarine
- 1 small chili pepper,chipped or 1-2 wri wri peppers finely chopped
- 1 stem of green onion (chopped finely)
- 1 small tomato, diced
- salt to taste
Methods/steps
- Cut small slits in the side of the eggplant and push in garlic cloves.
- Roast Eggplant in microwave on high for 20 minutes.
- Remove roasted eggplant and slice it down the middle while it is hot.
- Scoop out cooked inside with spoon (along with garlic)and place in a small bowl.
- Add margarine, salt, onion, tomato, green onion and pepper.
- Mix well with a fork. Serve with roti.
