Potato Balls

Description

These are a treat any time! I was lucky enough to have my cousin's wife show me how to make them.

Ingredients

Batter:

1 cup split pea flour

2 cups all-puropse flour

1 1/2 tbsp. grind garlic

1 tbsp pepper sauce 

1 tbsp baking powder

6-8 drops of yellow food colouring

1 tsp instant yeast

1 tsp green onion (finely chopped)

1 tsp ground geera (cumin)

1 tsp salt

2 cups water

Potato:

  • 6 large potatos
  • 3 cloves garlic (minced with 1 wri wri pepper)
  • 1 tbsp   green onion (finely chopped)
  • 1 1/2 tsp ground geera (cumin)

 4 cups vegetable oil (for frying)

Methods/steps

Batter:

measure and mix all ingredients listed for the batter.  Then, leave it to rise for 1 hour.

Potato:

  1. Peel, boil and mash the potato
  2. Add the ingredients listed for the potato. Mix well.
  3. roll the potato mixture into 2 inch balls (you can make them bigger if you prefer)

Once the batter has risen, you can proceed with the following instructions:

  1. In a deep pot/ wok/ kahari, heat some vegetable oil (approx. 4 cups) on med-high heat
  2. Using your fingers or a spoon, take a ball of potato and dip it into the batter.  Make sure to cover all sides with batter.
  3. Place the ball into the hot oil (you can cook 3-4 at a time, depending on how big your pot is) 
  4. Cook each ball for approx. 2 minutes on each side.  It's done when it's cooked golden brown
  5. Serve with your favourite sour or pepper sauce
