Chicken Chow Mein

  • 1 pkg 340g chowmein noodles (I used Imam brand)
  • 2 pieces of chicken breast (de-bone) wash, cut into small pieces & set aside
  • 1 ½ medium sized onion (sliced thinly)
  • 3 cloves of garlic (chopped finely)
  • 4 wri wri pepper (cut into halves) * optional
  • 2 celery stalks (cut into large pieces incl leaves)
  • 2 green onions chopped into medium pieces
  • 2 leaves of fresh thyme (finely chopped – or 1 tsp dried thyme)
  • 1 medium red pepper sliced thinly
  • 3 cups of frozen vegetables
  • 3 tablespoons oil
  • 1 ½ teaspoon salt
  • 1 teaspoon sugar
  • ½ tablespoon black pepper
  • ½ teaspoon chinese spice
  • 1 ½ teaspoon teriyake marinade
  • 2 tablespoon magi seasoning (or soya sauce)
  • 2 tablespoon oyster flavour sauce
  • 1 ½ tablespoon butter
  • 1 tablespoon soya sauce

Methods/steps

  1. Add 5 cups of water to skillet or frying pan bring to a boil
  2.  Add chicken pieces and boil for 5-6 mins & drain
  3.  In skillet or frying pan over medium-high heat, add 2 tablespoon oil
  4.  Add chicken pieces
  5. Add ½ of onion, celery, & green onion & mix
  6.  Reduce heat to medium
  7.  Add garlic, thyme & hot peppers (increase heat to medium-high)
  8.  Add black pepper & ½ teaspoon chinese spice & mix
  9.  Add ½ teaspoon salt & ½ teaspoon sugar
  10.  Add 1 ½ tablespoons teriyaki marinade
  11.  Add remainder of all cut ingredients and mix
  12.  Stir & fry for 5 mins
  13.  After 5mins, add 3 cups of frozen vegetable blend
  14.  Add ½ tablespoon magi seasoning
  15.  Fry meat and vegetables for 10-15 mins
  16.  Add 1 tablespoon oyster flavoured sauce
  17.  Cook chicken pieces until chicken is cooked & turn off stove
  18.  In another large pot, add ½ pot of water and bring to a boil. Once water is at a boil add 1 teaspoon salt & 1 tablespoon oil
  19. Break chowmein into smaller pieces and add to boiling water
  20. Boil for 8 mins and drain
  21.  In same large pot turn heat off and add butter
  22.  Add drained noodles and stir and add ½ of meat & veg mix
  23.  Add1 tablespoon oyster sauce &1 tablespoon soya sauce
  24.  Add remainder of meat & veg & mix
  25.  Add 1 ½ tablespoon magi seasoning , mix & serve

Additional Tips

You can use pre-cooked chicken pieces for a faster recipe.
