"Pumpkin" and Shrimp

Description

Although I use butternut squash for this recipe, the taste is very similar to the pumpkin that is usually used.

1 medium butternut squash

454g bag of shrimp (cooked)

1 large onion (chopped)

8 cloves of garlic (minced)

3 tbsp. vegetable/ olive oil

1/2 tsp salt

1/4 tsp. black pepper

1/4 tsp geera (ground cumin)

1 tsp. hot pepper chopped

1 tbsp. brown sugar

1 1/2 cups water

Methods/steps

Prep:

-cook the shrimp if you are using raw shrimp

-peel and cut the butternut squash. It should be cut into approx.  pieces of 1/4'' thickness and 1 1/2'' length (all the pieces just have to be about the  same size)

  1. In a pot, heat the oil on med-high heat.  Add the onion, garlic and hot pepper. Cook for 1 min.
  2. Add the squash pieces, geera,salt, black pepper, and stir together.  Cook for 3 minutes.
  3. Add the water and stir. Cover and cook on med. heat for 15 minutes. Stir once or twice during cooking time. Add shrimp.
  4. Add sugar and stir. Continue to cook uncovered for 6-8 minutes (until the water has evaporated and squash is soft)

Additional Tips

This can be made vegetarian by simply omitting the shrimp.

It was great. i love it, i did it with the winter squash.
