4 cups water
8 ounces oxtail or choice, as desired
1/2 tsp ginger, grated
sprigs of thyme, chopped
dash freshly ground pepper
2 1/2 pounds lean meat (chicken, pork, beef, or duck), chopped
2 tsp raw sugar
4 garlic cloves
2 whole red hot peppers
1/2 cup cassareep
1 stick cinnamon
2 whole cloves
dash of salt
Methods/steps
- Boil water in a medium saucepan.
- Toss in all ingredients and add enough water to cover meat.
- Bring to a simmer and cook until meat is soft, around 2 hours.
- Remove hot pepper before serving.
