2 medium, sweet cassava
1 small, dried coconut
2 tbsp. butter OR margarine
1/2 cup sugar
1/2 tsp. allspice
1/2 tsp. salt
1/2 tsp. vanilla essence (extract)
2 cups water
Methods/steps
- Peel, wash and grate cassava. Grate coconut. Mix both with butter.
- Add sugar, spic, salt and vanilla essence. Mix well. Add enough water to bind mixture.
- Bake in a shallow, greased 8" (20 cm) square pan at 350F (180C) for about 1-1 1/2 hours. Top should be brown and crisp. Cut in 2" (5cm) squares before serving.
