Cassava Pone

2 medium, sweet cassava

1 small, dried coconut

2 tbsp. butter OR margarine

1/2 cup sugar

1/2 tsp. allspice

1/2 tsp. salt

1/2 tsp. vanilla essence (extract)

2 cups water

Methods/steps

  1. Peel, wash and grate cassava.  Grate coconut.  Mix both with butter.
  2. Add sugar, spic, salt and vanilla essence.  Mix well.  Add enough water to bind mixture.
  3. Bake in a shallow, greased 8" (20 cm) square pan at 350F (180C) for about 1-1 1/2 hours.  Top should be brown and crisp.  Cut in 2" (5cm) squares before serving.
