Egg Curry

Description

This is a fairly quick curry dish to prepare.

6 eggs (hard-boiled and peeled)

7 cloves of garlic

1 large onion

6 med. potatoes (peeled and cut in half)

2 med. tomatoes (diced)

3 tbsp. oil

3 tbsp curry powder

1 tbsp garam masala

1/4 cup water

1/4 tsp  black pepper

2 tsp  salt

hot pepper (optional)

 

Methods/steps

  1. In a large pot or kahari, heat the oil and add the onion, garlic and hot pepper (optional).  Fry on med-high heat for approx. 3 minutes.
  2. In a small bowl, mix curry powder and masala with 1/4 cup water, to make a paste.  Add this to the onion and garlic and cook for approx. 1 minute (stir constantly).
  3. Add the tomatoes and potatoes and stir until it is coated with the curry mixture.
  4. Add salt, black pepper and cook everything for 5 minutes. 
  5. Add an additional 2 1/2 cups water and cook for approx. 20 minutes over medium heat (until potatoes are well cooked).  Add the eggs in the last 10 minutes of cooking time.
