Fried Smoked Herring

Description
This is a great side dish that can be eaten with dhal and rice.Ingredients

- 18 pieces of smoked herring
- 1/2 lemon (cut into 4)
- 2 medium tomatoes (diced)
- 1/2 sweet (red) onion (diced)
- 2 1/2 medium onions (sliced)
- 1 green onion (chopped)
- 1 stalk of cilantro (optional) finely chopped
- 4 wri wri peppers cut into fours
- 8 tablespoon of oil
- 3 tablespoon sweet soya sauce
- 1 tablespoon soya seasoning mix or salt
- 1 tablespoon light soya sauce
Methods/steps
- Wash smoked herring under water
- In a deep frying pan add herring, 2 lemon wedges and enough water to cover fish, and bring to a boil.
- boil for 15 mins and strain.
- add water again to pan and repeat step # 2
- boil for 20 mins and strain
- remove as many bones as you can ( fish should be tender at this stage)
- bring pan heat to medium and let remainder of any water evaporate.
- add oil & heat for 1-2 mins
- add half of all cut ingredients and increase heat to medium high.
- Sautee for 4-5 mins and add smoked herring (discard lemon wedges)
- mix together and add remaining cut ingredients
- add sweet soya sauce and stir
- add soya seasoning mix (or salt) and stir
- add light soya sauce
- mix and fry together for 5 -8 mins
- remove from heat and serve.

Additional Tips
The longer you boil smoked herring the less salty it will be.
