Duff (dumplings)

Description

These are usually eaten in a soup or fried and eaten with "provisions" (plantain, cassava, edoe, etc) and the side dish of your choice.

2 cups all-purpose flour

1 tbsp baking powder

2 tbsp sweet butter

1/2 teaspoon salt

Methods/steps

1. Sift the flour, salt and baking powder into a medium sized bowl.

2. Cut butter into the mixture until it is crumbly.

3. Add enough cold water to make a fairly stiff dough.

4. On a lighly floured surface, knead dough until smooth.

5. Shape into balls (about 1 1/2 inches in diameter ) or roll out into a cylindar shape

Option 1: Drop dumplings (4-5 at a time) into a pot of boiling (salted) water and cook for approx. 10 minutes.  Then remove them from the water and fry the dumplings with some butter, until they are lightly browned.  

Option 2:  Drop dumplings into a soup or stew in the last 10-15 minutes of it being done.
