Fried Salt Fish

Description

This is a delicious side dish that can be served with bakes or eaten with dahl and rice.

1/2 pound dried salted fish

2 tbsp oil

1 med. onion (chopped)

1/2 tsp black pepper

1/2 tsp minced garlic

1tsp hot pepper (minced)

1 med. tomato (chopped)

Methods/steps

  1. In a pot, place the salted fish in water and boil for 15 minutes.
  2. Drain the water and let the fish cool down until you can handle it.  Remove any skin or bones from the fish. Squeeze out any excess water from the fish. Using a fork, flake the fish.
  3. Heat the oil and sautee the onion, garlic and pepper.  Add the fish and cook over med. heat.
  4. Add the tomatoes and black pepper.  Continue cooking until the tomatoes are soft.
